I have been to France many times through the years and enjoyed the awesome pastries. South of the US, I have struggled to find croissants worthy of the name, that is, until now. Trying to find pastry and coffee at 7;30 am before most of Cuenca has even awakened? That is no simple task. I walked and walked to 3 places, according to google, which would be open; no luck. Happily, I found the gorgeous San Juan Hotel and their sweet coffee and pastry area. The chocolate croissant was equal to any I've eaten in France, truly; flaky, buttery, and filled with excellent quality chocolate. When I mentioned how pleased I was, the wait staff asked if I would like to meet the chef. Alexis Paredes, is the genius. Upon conversing with him, he told me that he is self taught re: making croissants. Thank you Alexis Paredes!! M. Sarlat
