My wife and I came to Beaune for 19 hours, on our way from Nice to Paris for her 40th birthday trip. Fortunately, we found Hotel le Cep before we even arrived. I didn’t know this would be the most important decision of our stay, but it turned out to be the most serendipitous chance I never could’ve thought existed, or found if I knew it did, but le Cep stumbled into our laps and our lives will never be the same because of it. The hotel was in the center of Beaune, walking distance for everything. The Grand Cru suite was worth every penny and watching the sunrise over the cathedral from the pen desk, drinking my coffee, was a welcome chance to realize the simplicity of life that can be learned from 13th century caves. We came to taste at Joseph Drouhin, which I highly recommend. Only two blocks away, under the city cathedral (“Notre Dame”?), which had a stunning light display at night that you have to see, it was built on top of the old Roman outpost that was the original founding of bone. During the cave tour, under the church and the city, we walked on moments earlier, we saw the old herringbone wall from the original Roman wall. now underneath the modern city. The Drouhin cave tour and Grand Cru tasting is amazing (do it!), but the Saint-Felix Caveaux de Degustation was a master class on Burgundy. The education, experience, and service was off the charts. Literally, down the stairs from our room 221, we dove into a cellar from the 13th century and found out more about terroir than we could have imagined finding. We chose the immersion grands terroir and it was sublime. The personal service, advice, and education that was delivered by the Sommelier was exceptional. I can’t recommend another place more that this, book the Grand Cru suite and the Immersion Grands Terroir experience. Lastly, the welcome and feelings we got from the moment we stepped inside to the drop off at the railway (GM literally dropped everything, grabbed blankets and the Polaris when our car reservation no showed, and drove us to the train station), it was the experience we didn’t know we needed but knew we wanted, From the bottom of my heart, Merci!
